Roasted Potatoes

Healthy & Delicious side dish

  • 6 Potatoes, washed and cut into wedges (You can use white, sweet or a mixture of the two)
  • 1/4 cup Olive Oil
  • 1 Onion, diced
  • 1 tsp Sea salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp seasoning of your choice (try steak seasonings or trader joe's 21 Seasoning Salute)
  1. Preheat oven to 400 degrees F

  2. Mix all ingredients in a large bowl

  3. Lay out on a baking sheet lined with parchment paper

  4. Cook for 20 minutes, then flip potatoes

    Cook another 10- 20 minutes until lightly browned and a fork goes inserts easily

  5. Season with additional sea salt if needed

This is a great side dish that I make all the time, now that I don’t make mashed potatoes with butter or milk. Try small red potatoes too, they cook up a little quicker so keep an eye on them.  You can always lower the temperature for this recipe and cook longer if you are cooking with other foods, like a roast or chicken.
