Roasted Potatoes
Healthy & Delicious side dish
- 6 Potatoes, washed and cut into wedges (You can use white, sweet or a mixture of the two)
- 1/4 cup Olive Oil
- 1 Onion, diced
- 1 tsp Sea salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp seasoning of your choice (try steak seasonings or trader joe's 21 Seasoning Salute)

Preheat oven to 400 degrees F

Mix all ingredients in a large bowl

Lay out on a baking sheet lined with parchment paper

Cook for 20 minutes, then flip potatoes
Cook another 10- 20 minutes until lightly browned and a fork goes inserts easily

Season with additional sea salt if needed
This is a great side dish that I make all the time, now that I don’t make mashed potatoes with butter or milk. Try small red potatoes too, they cook up a little quicker so keep an eye on them. You can always lower the temperature for this recipe and cook longer if you are cooking with other foods, like a roast or chicken.
