Cinnamon muffins

 

Cinnamon Muffins

  • 2 cups Tigernut flour (Anthony's on Amazon is good)
  • 1/2 cup Cassava flour (Anthony's on Amazon is good)
  • 1 tbsp unflavored gelatin (I like Great Lakes gelatin on Amazon)
  • 1 tsp baking powder- aluminum free (You can find at Trader Joes)
  • 1 tsp baking soda
  • 3 tsp cinnamon
  • 2 ripe bananas
  • 1/2 cup coconut oil/ melted, but not hot
  • 3 tbsp water
  • 2 tbsp lemon juice
  • 1/4 cup honey
  1. Preheat oven to 350 degrees F and line muffin pan cups

  2. Mix all dry ingredients; tigernut & cassava flours, gelatin, baking soda & powder, and cinnamon- break up any clumps from the tigernut flour

  3. Mash your bananas- A potato masher works great

  4. Add wet ingredients; bananas,coconut oil, water, lemon juice and honey

  5. Beat in mixer just until combined and moist

  6. Scoop out and distribute the batter into the muffin pans

  7. Bake for 25-30 minutes or until a toothpick comes out clean

Enjoy these healthy muffins for breakfast or a late day snack.  You can add Enjoy Life chocolate chips for an added treat!
