Cinnamon muffins
Cinnamon Muffins
- 2 cups Tigernut flour (Anthony's on Amazon is good)
- 1/2 cup Cassava flour (Anthony's on Amazon is good)
- 1 tbsp unflavored gelatin (I like Great Lakes gelatin on Amazon)
- 1 tsp baking powder- aluminum free (You can find at Trader Joes)
- 1 tsp baking soda
- 3 tsp cinnamon
- 2 ripe bananas
- 1/2 cup coconut oil/ melted, but not hot
- 3 tbsp water
- 2 tbsp lemon juice
- 1/4 cup honey

Preheat oven to 350 degrees F and line muffin pan cups

Mix all dry ingredients; tigernut & cassava flours, gelatin, baking soda & powder, and cinnamon- break up any clumps from the tigernut flour

Mash your bananas- A potato masher works great

Add wet ingredients; bananas,coconut oil, water, lemon juice and honey

Beat in mixer just until combined and moist

Scoop out and distribute the batter into the muffin pans

Bake for 25-30 minutes or until a toothpick comes out clean
Enjoy these healthy muffins for breakfast or a late day snack. You can add Enjoy Life chocolate chips for an added treat!
