Arugula & Pear Salad

Healthy Salad

  • 4 cups Arugula (washed)
  • 1 Pear, thinly sliced (Bosc or Anjou)
  • 1/4 cup Olive Oil (extra virgin)
  • Juice of 1/2 a lemon
  • 1 tbsp Raw Honey
  • 1 tsp Dijon mustard
  • 1/2 tsp sea salt & pepper (or to taste)
  • 1/4 cup walnuts (optional)
  1. Toss Arugula and Pear together

  2. Mix the olive oil, lemon juice, honey and mustard, salt & pepper and drizzle over salad

  3. Add walnuts if using

This salad is packed with nutrients and the pear and arugula is an excellent combination for your thyroid health.
